90-Second Skinny Bleu Cheese Dip

Sorry I didn’t snap a better photo for you all. I will get a new one up next time I make this, which won’t be too long because I am IN LOVE with my Buffalo Cauliflower Poppers and this dip is a must with them!! I think this would also taste fantastic as a dip for raw veggies, on a steak or even with some sauteed veggies…mushrooms, onions, and asparagus, perhaps…mmmm. Now I am hungry.

There are 3 aspects, other than the phenomenal flavor, that are amazing about this recipe:

  • it literally takes no longer than 90 seconds to make!!
  • it is very low fat and the healthiest bleu cheese dip I have ever made!!
  • you have the ability to make it as strong (bleu cheese-wise) as you like!!

Ingredients:

  • Fat-free sour cream
  • Bleu cheese (any kind)

Put some of the cheese in a bowl and microwave until melted, about 20 seconds or less should do it.

Mix in sour cream.

Crumble some of the cheese on top, if you like.

BOOM. You are done.

Now, I didn’t include any specific amounts in this recipe because you really can make as much or as little as you like and use as much or as little of the ingredients as you like. Just mix it up and dive in!!!

Buffalo Cauliflower Poppers

These are officially my new favorite game day/party snack!!!! They were quick and simple and the flavor was just AMAZING!!!! Not to mention they are HEALTHY 🙂  So, I recommend you make these this weekend and eat all of them. Then repeat the next weekend. And pair them with my 90-Second Skinny Bleu Cheese Dip 🙂

Psh…Who needs fried, unhealthy, greasy, messy chicken wings?!

Ingredients:

  • 1 cup water
  • 1 cup flour
  • 2 tsp garlic powder
  • 1-2 heads-worth of cauliflower florets (about 6 cups)
  • 3/4 cup Franks Hot Sauce
  • 1 tbsp melted butter

Preheat the oven to 450°F. Lightly spray a large non-stick baking sheet with oil.

Combine the water, flour, and garlic powder in a bowl and whisk until well combined.

Toss in the cauliflower pieces and mix around (I use my hands…messy but effective!) until completely coated with the flour mixture and place on the baking sheet. Bake for 20 minutes.

While the cauliflower is baking, combine the hot sauce and butter in a small bowl or a measuring cup, which is my preference because it makes it easy to:

Pour the hot sauce mixture over the baked cauliflower and continue baking for an additional 5 minutes.

Serve the poppers with toothpicks for parties, or in a pile with a spoon for serving. Either way, they will be a big hit with everyone!!
